Spaghetti carbonara recipe
Ingredients (10)
- 400g spaghetti
- 1 tbsp olive oil
- 200g sliced Primo Gourmet Selection Pancetta, cut into 1cm-wide strips
- 2 garlic cloves, finely chopped
- 3 Coles Australian Free Range Eggs, plus 1 extra yolk
- 1 egg yolk, extra
- 100ml thickened cream
- 2/3 cup (50g) freshly grated parmesan
- 2 tbsp chopped flat-leaf parsley leaves
- parmesan, extra, to serve
Method
- Step 1 Cook pasta in a large pan of boiling salted water according to the packet instructions. Meanwhile, heat oil in a frypan over medium heat. Cook pancetta, stirring, for 2-3 minutes until beginning to crisp. Add garlic for 30 seconds, then set pan aside.
- Step 2 Place eggs and extra egg yolk, cream and parmesan in a bowl. Season, then mix gently with a fork. Drain pasta, then return to pan. Quickly add egg and pancetta mixtures and parsley. Toss to combine – the heat from the pasta will cook the egg slightly and form a creamy sauce. Serve immediately with extra parmesan.

Ingredients (11)
- 250g penne pasta
- 1 tbsp olive oil
- 200g thickly sliced button mushrooms
- 6 fresh thyme sprigs, leaves removed
- 1 barbecue chicken, bones removed, meat and skin shredded
- 40g packet French onion soup mix
- 60g baby spinach
- 375ml (1 1/2 cups) Coles Dairy Full Cream Milk
- 125ml (1/2 cup) Coles Thickened Cream
- 155g (1 1/2 cups) grated pizza cheese
- Chopped fresh continental parsley, to serve
Method
- Step 1 Grease a large baking dish. Cook pasta following packet directions. Drain. Meanwhile, heat oil in a large, deep frying pan over high heat. Add mushrooms and thyme. Cook, stirring occasionally, for 3 minutes or until softened.
- Step 2 Preheat the oven grill on high. Add the chicken, French onion mix, spinach, milk, cream and half the cheese to the mushroom mixture. Bring to a simmer. Stir in the pasta. Season.
- Step 3 Transfer the pasta mixture to prepared dish. Sprinkle with remaining cheese. Grill for 2-3 minutes or until golden. Top with parsley.

Ingredients (11)
- 25g butter
- 1 tbsp olive oil
- 2 cloves garlic, crushed
- 1 tbsp plain flour
- 1 cup (250ml) chicken style liquid stock
- 2 tbsp white wine
- 1/2 cup (125ml) cooking cream
- 1-2 tsp Dijon mustard or dry mustard powder
- 750g peeled Tassal Raw Aussie Tiger Prawns
- 1 tbsp coarsely chopped fresh flat-leaf parsley
- Steamed rice, to serve
- Step 1Heat butter, oil and garlic in a medium frying pan over medium-high heat until butter has melted. Add flour. Cook, stirring for 1 minute or until mixture bubbles.
- Step 2One at a time, add 1/4 cup of the stock, stirring constantly to prevent lumps forming. Add wine and cream. Cook, stirring for 3 minutes or until sauce boils and thickens. Add mustard, to taste. Season.
- Step 3Add prawns. Simmer, stirring for 3 minutes or until prawns are cooked through. Stir in parsley. Serve creamy garlic prawns with steamed rice.
